Cheese Dream

One of my favourite foods from childhood is the Cheese Dream. You won't know what this is, because my Mother made it up! She discovered early on that when something has an enticing name, the chances are it will get eaten. She raised 4 children, so I consider her somewhat of an expert in the field. A Cheese Dream is essentially melted cheese on toast. Do not get this confused with a Grilled Cheese - I am talking about something entirely different.

You begin with a piece of bread, which may or may not be slightly toasted. Next you layer pieces of sliced cheese on the bread and pop it in the toaster oven. Cook until the cheese has melted and try not to burn the roof of your mouth while devouring. 

In my house, we used to jazz up our Cheese Dreams with some sliced tomato and alfalfa sprouts (my Mom sprouted her own...she is an authentic hippy)! Today I created something I only wish I had thought of all those years ago - I mean, it's slightly life altering. I added pickles!! Try it! Try it! Try it!


1 slice of bread (Silver Hills "Squirrelly" bread)

1 pickle, sliced

4-5 slices of cheddar cheese

Place the bread in a toaster oven for 1-2 min. or until lightly toasted. Remove from toaster and place pickle slices on top of the bread. Cover pickles with sliced cheddar and place in the toaster. Cook for about 5 min. or until cheese has melted.

These make an amazing, easy, mess-free lunch or dinner. Try serving them along side our Lazy Chicken Soup for a true comfort meal!
